Anthony, a second-generation Italian-American cook, grew up watching his family gather around the oven every Sunday. In the early days, Anthony sourced premium Pennsylvania coal and retrofitted a custom-built oven capable of reaching over 900°F. He spent years perfecting his dough recipe — a slow 48-hour cold fermentation process using imported Italian flour — and curating toppings from local farmers and specialty producers.
